• Sweet potatoes
  • Milk
  • Salt and pepper
  • Mozzarella cheese, shredded
  • Cheddar, shredded
  • Tomatoes


  1. Preheat oven to 400oF/ 200oC
  2. Take potatoes and poke them on all sides with a fork
  3. Bake for 50 minutes or until fork tender
  4. Allow potatoes to cool, then cut off either end and cut in half lengthwise
  5. Scoop out potatoes flesh leaving a thin layer of sweet potatoes in side, and add flesh to a medium bowl
  6. Place skins back on baking sheet, drizzle with olive oil bake for 10 minutes
  7. Mash potatoes flesh with milk salt and pepper until smooth and creamy
  8. Remove sweet potatoes skins from oven, fill each with an equal amount of potatoes mixture and top with cheese and diced tomatoes until the cheese is melted
